Tofu Scramble Bowl with Grits, Tempeh and Charred Brussels.
Ingredients - Tofu Scramble
*Serves 3 Portions*
2 tbsp - grapeseed oil for cooking
1 - block tofu
3 tbsp - soy sauce
2 tbsp - dijon mustard
2 tbsp - chopped garlic
1 tsp - black pepper
½ tsp - dried sage
¼ tsp - black salt ( optional )
2 tsp - adobo
2 tbsp - nutritional yeast
1 ½ tsp - turmeric
Tempeh and Brussel Marinade
1/4 cup - olive oil
1 tbsp - chopped garlic
1 tbsp - maple syrup
1 tbsp - tabasco sauce
1 tbsp - soy sauce
Grits
¼ cup - diced yellow onion
2 tbsp - chopped garlic
3 sprigs fresh thyme
½ cup - white wine
½ cup - veg stock
½ cup - grits
1 1/2 cup - full fat coconut milk
1 tsp - sea salt
1/2 tsp - white pepper
6 tbsp - nutritional yeast
3 tbsp - vegan butter-cold
1/4 cup - vegan cheese ( optional )
Instructions
Step 1
Press the water out of your tofu by squeezing firmly, then crumble with your hands into a bowl and mix in all the ingredients for the marinade.
Step 2
Prepare the grits
Saute your onions and garlic in oil till gold brown. Deglaze with white wine, add your thyme and allow to reduce. Add your veggie stock and reduce a bit more.
Add your grits and mix with your mixture and after stirring in then stir in your coconut milk and season.
Cover with a lid and allow to cook on low for about 20 min, till soft but tender.
Add your cold butter to emulsify and add in more plant based milk to loosen it up if it too thick.
Step 3
Cut your tempeh into strips or cubes, cut your brussels in half and in a large bowl toss them in your marinade then set to cook in an air fryer for maybe 10 min at 400 degrees. You can also pan fry them if you do not have an air fryer.
Step 4
Saute your favorite veg that you like in your “eggs” I like to saute some diced onions and peppers, then add in my marinaded tofu scramble. Cook until the moisture from the tofu has dissipated and is no longer soggy and is somewhat dry.
Step 5
Plate your masterpiece, I like to do a plop of grits on one side of my bowl, tofu scramble on the other. Then arrange your crispy brussels and tempeh how you like.
Step 6
Garnish with some cilantro and or green onions and enjoy !
