Blueberry Poptarts
Blueberry Poptarts, Vegan
Ingredients - Dough
2 cups flour
¼ cup sugar
1 tsp salt
½ cup vegan butter
½ cup shortening
¼ cup water
Ingredients - The Filling
1 pound frozen blueberries
2 Tbsp corn starch, 1/4 cup water mixed together
½ cup sugar
1 lemon, juiced
a pinch cinnamon
Ingredients - The Glaze
1 cup powdered sugar
1 tbsp almond milk
3 blueberries from your filling with some sauce
pinch of salt
pinch lemon juice
Instructions
Step 1
Make your dough first and set aside so it can rest. Mix your first 3 ingredients and then half of your vegan butter and mash with your hands and watch it combine.
Step 2
Slowly work in the rest of the butter and shortening. Then pour in cold water just enough to bring it all together. Once it has formed a ball. Set aside and make filling.
Step 3
When your filling is cooled. Add about 2 tbsp of filling per tart. See video for a visual demonstration.
Step 4
Bake at 350 for 25 min. Allow to cool and then they're ready for glaze/icing.
