Blueberry Poptarts, Vegan


Ingredients - Dough

2 - cups flour

¼ - cup sugar

1 - tsp salt

½ - cup cold vegan butter, cubed

½ - cup shortening

¼ - cup water

Ingredients - The Filling

1 - pound frozen blueberries

2 - tbsp corn starch, 1/4 cup water mixed together

½ - cup sugar

1/4 cup - fresh lemon juice

a pinch cinnamon

Ingredients - The Glaze

1 - cup powdered sugar

1 - tbsp almond milk

3 - blueberries from your filling with some sauce

pinch of salt *

1/4 tsp - lemon juice

Tools you will need

  • Rolling Pin

  • Large Mixing Bowl

  • Bench Scraper

  • Measuring Cups

Instructions

Step 1 - Gather all ingredients & make the dough

There is nothing worse than going to make something and realizing you don’t have the stuff ! Gather all the essential mise en place and measure out all the ingredients for the pastry dough. Mix the flour, sugar and salt and then half of your cold vegan butter and mash with your hands and watch it combine.

Step 2 - Make the pastry dough

Slowly work in the rest of the butter and shortening. Then pour in cold water just enough to bring it all together. Once it has formed a ball set it to the side to rest and make filling.

Step 3 - Fill the pastries

Once your filling has cooled down in temperature, add about 2 tbsp of filling per tart. See video for a visual demonstration.

Step 4 - Bake & Glaze

Bake at 350 for 25 min. Allow to cool and then they're ready for glazing.

I like to prepare the glaze in a shallow bowl and dip each pastry into the glaze. Another fun way is by piping on the glaze, which ever way you choose to glaze them, enjoy right away or save them in an air tight food safe bag and leave it on the kitchen counter for up to 3 days.
