Kimchi Grilled Cheese


Making an amazing vegan grilled cheese may sound like a daunting task but with a nice vegan cheese, a solid non-stick pan with a lid and some steam. It comes together very easily. Once I learned this hack I never had a difficult time getting vegan cheese to melt. It just needs some moisture to help it along. For this I like to use a squeeze bottle filled with water but you could use what ever you happen to have at home. If you have never tried adding kimchi in your grilled cheese…..thank me later.

My favorite brands of vegan cheese are Violife and Miyoko’s as in my honest opinion are really just the best. They melt so nicely and even have a nice stretch to them as well as a nice flavor variety.



Kimchi Grilled Cheese

Makes 1 Sandwich 

Ingredients

2 tbsp - vegan butter

1 slice - Violife Mature Cheddar Slices

1/4 cup - Violife Mozzarellas Shreds

1/4 cup - kimchi ( I used store bought from a local Asian market )

2 slices of the bread of your choosing ( I used a garlic sourdough )

Tips for melting vegan cheese

  1. A squeeze bottle with water really helps to pour droplets of water into the pan to help create some steam to melt the vegan cheese.

  2. A lid over the pan to trap in the steam and allow the vegan cheese to melt with ease.

  3. Cook low n slow to get that golden color on the crust and melt the cheese internally.
