Strawberry Cake Donuts
Makes 12 Cake Donuts
Ingredients
2 ¼ cup all purpose flour
1 ½ cup sugar
¾ tsp baking soda
1 tsp salt
1 ½ cup plant based milk
3/4 cup of vegetable oil
1 Tbsp vanilla extract
3 tbsp lemon juice
1 tbsp strawberry emulsion
Ingredients - Donut Glaze
1 tbsp freeze dried strawberry- crushed up
1 tsp strawberry extract
1 cup powdered sugar
1 tsp vanilla extract
1 tbsp plant based milk
the tiniest pinch of salt
Helpful Note
Emulsion and extract are not the same thing. Emulsion is used in goods that need to with stand high heat like these donuts that are going in the oven. Extract is used in things like the glaze where the flavor is wanted but it does not need to withstand high baking temperatures.
Instructions
Step 1
Combine your plant based milk and lemon juice to allow a butter milk like mixture to combine. Then measure out and separate your dry and wet ingredients. Now add in your wet ingredients to your dry and gently mix.
Step 2
Grease your donut trays and slowly pour in your batter leaving some room so that way they can have room to rise.
Step 3
Bake at 350 degree’s for about 20 min or until fully baked. While your donuts are baking your can prepare the glaze.
Step 4
Allow to cool down a bit then pop them out and dip your donuts in your glaze.
Step 5
Before the glaze dries dust over your freeze dried strawberry dust and enjoy.
