Strawberry Milk Chia Pudding

The overnight breakfast meal prep that will have you excited to wake up and have breakfast day after day.

Strawberry Chia Seed Pudding with Brown Butter Streusel

I love this recipe cause it is so versatile. I have played around with flavors and done this with matcha powder, chocolate/vanilla protein powder and it always makes for an easy breakfast on the go.

*Makes about 6 servings of one cup of chia pudding per serving*

Strawberry Milk Chia Pudding

Ingredients - Chia Pudding

1/2 cup chia seeds

2 cups almond milk

1 can coconut cream

2 tbsp maple syrup

2 tsp vanilla extract

1/4 tsp salt

6 strawberries

Strawberry Jam

1 container or 1 pound of strawberries thoroughly washed

2 tbsp vegan butter

1/4 cup lemon juice

1/4 cup brown sugar

1 tbsp corn starch mixed with 1/4 cup cold water

Streusel

1 cup flour

3/4 cup brown sugar

1/4 tsp salt

6 tbsp cold butter

1/4 melted brown butter

1/2 cup oats

1 tsp cinnamon

Instructions

  1. Mix all your chia seed pudding ingredients together. I used a Nutribullet to blend the strawberries into the almond milk and then whisked everything together and let it set in a container over night. In the morning upon checking on your chia seed pudding give it another good whisk.

  2. To make your jam, saute your strawberries in vegan butter and cook till softened. Once soft add in your lemon juice and allow to cook down a few more min. Add in your brown sugar and stir on low to medium heat to thicken. Lastly whisk in your cornstarch slurry and allow to set on the lowest heat stirring till desired texture. Pour into a dish or mason jar to reserve to use later.

  3. To make streusel, add in all your dry ingredients to a bowl and with your hands, squish the butter into the flour to make a crumbly mixture till well combined. Lastly pour your browned butter and mix well. Transfer to a sheet tray or baking dish and bake for 10-20 min checking on it periodically and stirring here and there to allow it to golden evenly till golden brown. Then set aside to cool.

  4. Time to assemble your masterpiece. Get as fancy or rustic as you would like layering your chia pudding and jam and topping off with your streusel and fresh fruits of your choice. I did stayed with the strawberry theme.

  5. Enjoy :)
