Cardamom Cranberry Orange Scones

* Makes 8 scones   * 

Ingredients

2 1/2 cups - all purpose flour

1/2 cup - sugar

1 tbsp - baking powder

1/2 tsp - salt

1/2 tsp - cinnamon

1/2 tsp - cardamom

2 tbsp - orange zest

1/2 cup - almond milk or any plant based milk

1/2 cup - melted butter

1/4 cup - orange juice

1 tbsp - flax seed mixed with 3 tbsp hot water ( flax egg )

1 1/2 cup - sugar + 2 tbsp - orange zest

Instructions

Step 1 - Gather all ingredients

There is nothing worse than going to make something and realizing you don’t have the stuff !

Step 2 - Before the batter

Grab one large bowl, a measuring pitcher / measuring cup and another smaller bowl to make the flax egg in. To make a flax egg add 1 tbsp to a bowl along with 3 tablespoons of hot water and set to the side for 10 minutes to let it thicken.

I like to zest the orange over a plate to collect the zest and then juice the orange and add it to the measuring pitcher of almond milk.

Step 3 - Build the batter

In the large bowl measure out all the dry ingredients from the flour, sugar, cinnamon, cardamom, baking powder and orange zest and give it a good whisk.

Measure out the almond milk, orange juice, melted butter and add these liquid ingredients to the dry mix along with the thickened flax seed egg.

With a whisk mix everything gently to avoid over mixing it. Once it comes together and is too thick to mix by whisk, I like to flour my hands and finish the mixing by hand and shape it flat and circular.

Step 4 - Cut the scones and bake

Pre heat the oven to 350 degrees Fahrenheit.

With a bench scraper or chef knife, cut the circular scone dough in half vertically and then again cutting it in half horizontally. Then go about cutting the 4 pieces into 8.

On a plate mix the 1 1/2 cups of sugar with 2 tbsp orange zest and press each scone firmly into the sugar mixture. On lined baking sheet lay out the scones with a little bit of room between each one and then bake in the oven for a total of 22 minutes. I like to rotate them after the first 11 minutes to ensure they bake evenly.

When they come out of the oven, allow them to cool down a bit and then enjoy right away.
