Cavatappi Pasta with a Creamy Vodka Tomato Sauce

Feeds 4

Ingredients

1 shallot, diced

3 tbsp chopped garlic

1 cup cherry tomato

3 tbsp tomato paste

1/2 cup vodka

1 can full fat coconut milk, unsweetened

1 tsp sea salt

1 tsp red chili flake

1/2 tsp fresh black pepper

2 tbsp vegan butter

olive oil for cooking

Instructions

Step 1

Get a big pot of boiling water going, drop your pasta and cook for about 9 min reserving 1 cup pasta water. In another sauce pan, once its hot add in a drizzle of oil and sauté your shallot, garlic and cherry tomato until golden brown and the tomato’s start to blister.

Step 2

Add in your tomato paste and start to cook it into your sauteed veg mixture. After a few min, deglaze everything with the vodka and allow the alcohol to cook out and reduce.

Step 3

Add in your coconut milk, salt, chili flake, pepper and your cooked pasta to allow everything to simmer together.

Step 4

Lastly you can loosen up the sauce if needed with the pasta water. Garnish with fresh basil, chili flake and vegan parmigiana cheese.
