Lemon Orzo with Garlic Brussels

Ingredients - For Orzo
1/2 cup yellow onion
2 tbsp chopped garlic
2 tbsp olive oil
2 tbsp soy sauce
1/2 cup white wine
1/2 pound orzo
1 cup veg stalk
1 can coconut milk
2 tbsp nutritional yeast
1 tsp sea salt
1/2 tsp black pepper
Ingredients - Brussels
2 cups of brussel sprouts cut in half
2 tbsp soy sauce
2 tbsp olive oil
1 tbsp minced garlic
1 tbsp maple syrup
1 tbsp franks red hot sauce
Instructions
Step 1
In a warm sauce pan, add in your oil and saute your onions till golden brown. Once golden add in your chopped garlic and saute the two together. Now add in your soy sauce and stir everything together to allow a browning to happen in the pan. This is where all the flavor is.
Step 2
Deglaze your pan with white wine and allow to cook and reduce for about 5 min on medium/low heat.
Step 3
Now add in half a pound of orzo and stir into your wine mixture. Pour in your vegetable stock and can of coconut milk and allow to simmer on medium heat. Stir in your seasonings like salt, pepper, and nutritional yeast.
Step 4
Once the orzo is al dente - usually after about 9 min, pull off the heat and allow to carry over cook and get thick.
Step 5
I like to cook my brussels in the air fryer for 10 min at 350 degrees Fahrenheit. Toss your sprouts in your marinade, place a piece of parchment paper in the air fryer and plop them in there for about 10 min till nice and crispy.
Step 6 - Serving and Plating
Place a portion of orzo on each plate and top with your crispy brussels and enjoy!
