Fried Tofu Cutlet with Sauteed Kale and Cauli Puree


Tofu Cutlet, Sauteed Kale & Cauli Puree

* Serves 4 *

Ingredients

16 oz tofu - 1 block

Ingredients - Batter

3/4 cup oat milk

1 1/2 tsp apple cider vinegar

1/2 tsp salt

1/2 cup flour

Ingredients - Breading

1 cup flour

1 cup panko

2 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp salt

1/2 tsp pepper

Tofu Instructions

Step 1

Take 1 block of tofu, cut in half and then in half again to make 4 sheets or 4 slabs of tofu rectangles to make our cutlets

Dunk your tofu into the batter till its throughly covered and then dredge both sides with your breading mixture.

Step 2

One at a time, slowly drop your tofu cutlets into a hot pot of oil and cook until golden brown.

Ingredients - Cauliflower Puree

1/2 a cauliflower, boiled

1/2 cup veg stock

1/2 cup full fat canned coconut milk

1 tsp salt

2 tbsp nutritional yeast

2 tbsp lemon juice

Instructions - for puree

Step 1

Boil 1/2 a cauliflower and allow to it cool a bit before blending with your warm stock and coconut milk. Add to a blender your cauliflower, stock, coconut milk, juice and spices.

Step 2

Add your puree to a sauce pan and allow flavors to mingle and the sauce to heat up before plating.

Ingredients for Sauteed Kale

2 cups of kale, washed a chopped

2 tbsp chopped garlic

1 tbsp soy sauce

1 tbsp maple syrup

1/2 tbsp tabasco

oil for sauteing or vegan butter

Instructions

Step 1

In a hot saute pan, add some oil and then drop in your kale letting all the oil go crazy beneath the kale, moving it around allowing all the kale to get a bit wilted.

Step 2

Add in your chopped garlic and saute that up with your kale. I like my kale to be a bit charred. I now add in my vegan butter once my garlic is nice and golden brown and I give everything a toss with my tongs as I add in my syrup and tabasco. Just like that your side of greens are done and are so good you may want to eat them on their own.

Bringing it all together

Writing this recipe was a bit challenging cause you could enjoy all of these components on their own or combined with other things which is why I sectioned up the recipe and instructions the way I did. However if you would like to assemble the dish in the video then just follow these steps.

Step 1 - Fry your tofu

Following the recipe, fry your tofu cutlets and set to the side.

Step 2 - Make your puree and sauteed kale

Warm your puree and have your sauteed kale ready to go.

Step 3 - Plating

Pull out your plates and drop a glob of that puree on each plate, then with your tongs, place a little pile of kale on top of your puree, then place your tofu on top. I garnished mine with a little tomato sauce, some fancy micro greens and shaved pistachio because I like to be bougie from time to time. Feel free to try new things and have fun with the process as this is how we learn our way around the kitchen and learn what we do and don’t like.
