Buffalo Mac N Cheese


Clearly I take my Mac N Cheese pretty seriously considering I now have 3 recipes which may seem unnecessary. However I beg to differ. I love all 3 of my children equally in different ways.

Sometimes I am craving a Classic Mac N Cheese. Other times I am really craving this Hidden Veggie Mac.

Buffalo Mac N Cheese

Ingredients

1/2 white onion, diced

3 tbsp chopped garlic

1 cup white wine

1 cup soaked cashews

1 can coconut milk, unsweetened full fat

1 lemon juiced

1 cup warm vegetable stock

1 cup reserved pasta water

2 tsp sea salt

1/2 tsp pepper ( optional )

1/4 cup nutritional yeast

1/4 cup franks red hot sauce

Instructions

Step 1

First things first gather your mise en place. Wash and prep your veg and then soak or boil your cashews. This will make it so much easier. Once everything is ready, throw all your ingredients in a vitamix or little bullet blender.

Get a pot of boiling water going for your pasta. In a large sauce pan saute your onion and garlic till golden brown and deglaze with white wine.

Step 2

In a blender, blend your soaked cashews with your coconut milk. Then add this thick mixture to your sauce pan to marry with your reduced wine. Loosen this up with a cup of warm vegetable stock and allow to simmer.

Step 3

Drop your pasta into the boiling water, I did a full box of cavatappi and cook for 9 min, then strain making sure to reserve at least 1 cup of starchy water.

Step 4

Add your strained pasta into your sauce pan and mix your pasta into the sauce. Add in your lemon juice, seasonings, pasta water and franks red hot sauce and allow everything to combine and thicken for about 5-10 min on medium low heat. Once nicely thickened you are ready to enjoy.
