Green Goddess Salad


If you have not tried Green Goddess dressing before than you are definitely missing out as it is one of my top favorites. I have to say I am surprised this dressing is not more hyped because it is seriously under appreciated. Its a nice creamy dressing, loaded with herbs - perfect for any salad.

Green Goddess Salad

Ingredients - Dressing

* Makes 1 1/2 cups dressing *

1/4 cup - tahini

3/4 cup - chopped cilantro

1/4 cup - chopped basil

2 tbsp - chopped mint ( optional )

3 - cloves of garlic

2 tbsp - fresh lemon juice

1 tbsp - champagne vinegar

1 tbsp - agave

1/4 cup - water

1 tsp - salt

1/4 tsp - black pepper

Ingredients - Salad

* Feeds 4 *

2 cups - diced cucumber

1 can - chickpeas ( rinsed and dried )

1 cup - chopped kale

2 stocks - chopped green onions

1 cup - roasted broccoli

Garnishes

* optional *

Violife brand vegan parmesan cheese block.

A couple slices of fresh radish, cherry tomatoes and fresh snow peas.


Instructions

  1. To make the dressing I simply put all the ingredients in my nutribullet and blended till smooth. If your blender needs a little help you can add in the water in small increments until everything loosens up and blends smoothly. Pour into a jar or squeeze bottle and allow to chill inn the fridge.

  2. For the chickpeas I tossed them in a bowl with a bit of oil, salt, pepper, garlic powder and popped them in the air fryer for 15 min at 400 degrees. Stopping half way to give them a stir for optimal crunchiness.

  3. The broccoli I roasted in my air fryer as it has a roasting setting. I tossed the broccoli heads in the same oil, salt and garlic as the chickpeas. Once the chickpeas are done, take them out to cool and plop in your “marinated” broccoli heads for about 10 min or until slightly charred and nicely cooked through.

  4. Once all components are prepped and ready to go we are ready to toss our salad. In a bowl add in your kale, cucumber, dressing, broccoli and chickpeas and give it a toss.

  5. Portion the salad onto your plate or plates and garnish with your favorite vegan cheese and or some fresh veg garnishes.
