Toasted Tahini & Pear Toast


Today I am making one of my favorite go to breakfast toasts that is sweet, savory and of course, plant based. This is my favorite - Toasted Tahini & Caramelized Maple Pear Toast !

To start In a warm pan, I allow one side of the bread to get golden in some vegan butter and then prepare the pear by slicing it thinly on a mandolin into some water to prevent it from browning. On the toasted side of the bread I add a generous amount of tahini before spreading out some toasted and crushed almonds on a lined sheet tray followed by some maple syrup and then for my favorite part, layering all of the slices of pear and smooshing everything down with the bread before popping it in a convection oven for 15 minutes.

Once it's done, I sprinkle over a bit of cinnamon before enjoying it with a nice cup of coffee. This is one of my favorite breakfasts for when I can't decide if I want something sweet or savory for breakfast and satisfies my cravings everytime.



Toasted Tahini & Pear Toast

* Makes 1 Toast * 

Ingredients

1 slice - thick bread ( I cut a slice from a hefty loaf of mountain bread )

1 pear - ( I used a bartlett pear )

1 tbsp - vegan butter

2 tbsp - tahini

2 tbsp - crushed toasted almonds

1 tbsp - maple syrup

cinnamon and salt on top to taste

Instructions

Step 1 - Slice the pear

To get the pear sliced nice and thin I used a mandolin however a sharp knife could maybe come close to getting some nice thin slices. I recommend propping the mandolin over a tub or container that is filled with water so the slices can fall in to prevent them from browning. Just make sure to dry the slices before layering on the sheet tray later.

Step 2 - Almonds !

If you happen to have some pre roasted almond on hand then you could go right for processing them in a food processor to get nice crumbly chunky pieces. I had raw almond on hand so I lightly toasted them in a pan and let them cool before processing them in the food processor.

Step 3 - Toast one side of the bread

In a warm pan, melt some butter and toast one side of the bread till golden then remove. The toasted side is where we are going to spread the tahini. The other side will get toasted in the oven as the pear caramelizes.

Step 3 - Prepare the sheet tray

On a sheet tray lined with parchment paper, sprinkle over maybe 2 tablespoons worth of crushed almonds and then over that drizzle over some maple syrup. Now for my favorite part, layering the slices pear over the almonds and maple. Then with the toasted side down, facing the pear slices. Smoosh the bread down over the pear slices so everything sticks nicely.

Step 4 - Bake

For this step I used my counter top convection oven however a full size oven would work for this recipe as well. Bake at 350 degrees Fahrenheit for 15 minutes. This is typically when the maple starts bubbling and caramelizing with the pears. Then I know its ready to go.

I recommend eating right away with your favorite morning drink of choice. Mine is always Bustillo espresso <3
