Watermelon Lime Spritz🍉

* Makes 2 drinks * 

Ingredients - Watermelon Juice

1 Watermelon - ( For this recipe I only needed to use a quarter of the watermelon to make 2 drinks )

1/4 cup - fresh lime juice

2 tbsp - agave

2 cans of lime flavored sparkling water ( I used Bubly )

Sugar Rim

1/4 cup - white sugar ( I recommend Zulka sugar because its bone char free )

1 tbsp - coarse salt

1 tbsp - lime zest

1 tsp - tajin powder ( or more if you like it spicy )

2 tbsp - agave ( to be used to brunch on the cup to help the sugar stick )

Instructions

Step 1 - Make the watermelon juice

If you are only making 2 drinks then you will really only need about a quarter of the watermelon. You could make some watermelon juice in bulk and freeze the rest in ice cube trays or simply eat the rest. Totally up to you.

To make the watermelon juice, I cut the watermelon in quarters to get easier pieces to work with. Then cut my quarter piece into smaller pieces to then cut the melon from the skin. In a blender or if you have a nultri bullet like me. Place all the chunks of watermelon in the cup or blender pitcher and blend the watermelon chunks with the lime juice and agave. Once that has blended well, I recommend straining it well to remove as much of that pulp as you can. I strained mine twice till I felt content with the clarity of the juice.

Step 2 - Making the slanted ice

I feel maybe there are a couple of ways to go about doing this. My hack for how I did this at home was by using a loaf pan and a towel to keep the glasses snug standing in a slanted position to allow the juice to freeze in a slanted position. For the cups I used, 3/4 of a cup of the watermelon juice which was perfect to get a nice slanted ice block like I was going for. Once you have poured in your juice and have it in the glasses to your liking, slide it in the freezer in an area that it wont get moved around or messed with. Let it freeze for 4-6 hours till its ready to go.

Step 3 - Make the zesty lime sugar

This part is pretty easy. On a plate mix together the sugar, salt, tajin and lime zest. In a cup have a bit of agave and a food grade brush used for basting and use the brush dipped into the agave to spread some of the agave on the side of the cup to act as a glue. Then gently pat on the sugar mixture. You can of course also go the margarita style way and dip the whole rim in the agave and then dip into the sugar mixture. Whatever sugar rim style fits the vibe or preference.

Step 4 - Assemble & enjoy !

Now for my favorite part, pouring in the lime sparkling water ! Once the watermelon ice is frozen and the sugar rim has been done, all that’s left is to pour in the sparkling water and take a sip. My favorite part is enjoying the crispness of the spritz as the flavors mingle as the watermelon ice melts and changes the flavor of the drink over time.
