Blood Orange Salad with Cashew Goat Cheese and Pistachio


Blood Oranges are so good and so beautiful. I really love every year when they come in season as it always inspires me to make something seasonal and fresh.

I really love this salad and I even bulk it up sometimes with some arugula. The cashew goat cheese and pistachios really tie it all in together.


Blood orange salad in a simple vinaigrette, cashew goat cheese and crushed pistachios.


Blood Orange Salad with Cashew Goat Cheese and Pistachio

Ingredients / Blood Orange Dressing

3 Tbsp - Blood Orange Juice

2 Tbsp - Lemon Juice

1 tbsp - minced garlic

1/3 cup - Olive Oil

1 tsp - zest from Blood Orange

Salt and Pepper to taste

Other Ingredients

5 Blood oranges - peeled

Cashew Goat Cheese

Fresh mint

Toasted and chopped pistachios

Instructions

Step 1

Wash fruit and set aside. Roast Pistachios and allow to cool. Then chop up.

Step 2

Step 3

Prepare dressing in a mason jar and give it a good shake.

Step 4

Peel all oranges and take off white membrane, then slice orange into slices to desired thickness.

Step 5

Dress and plate the salad to your liking, you can even disregaurd the slicing of the oranges and keep the salad a bit more rustic with just using the nubs from inside the orange. You can toss your orange salad in the dressing and then plate, or plate your oranges first and drizzle over your dressing. Using a squeeze bottle or simply using a spoon, garnish your salad with cashew cheese, top with micro mint or chopped up regular mint and finish with your chopped pistachios.
