Burnt Cinnamon Maple Nut Butter on Toast


Most mornings I am looking for a simple quick and easy breakfast to go along side my coffee and this works every time as its not too sweet.

If its the week end, then I like to indulge myself with a full on tofu scramble breakfast platter. Maybe this goes without saying, but this isn’t your ordinary peanut butter. Its pretty unique because it is made with a blend of roasted peanuts, cashews and pecans that are blended with brown sugar, coconut oil and caramelized maple syrup.

The cashews give it such a creamy texture, the pecans add an elevated deep flavor and of course peanuts are just classic. What steps up the flavor another notch is the burnt cinnamon that is infused with the caramelized maple syrup. Another bonus to making this is you get to enjoy it more than once and combine it in all the places you would peanut butter !



Burnt Cinnamon Maple Nut Butter on Toast

* Makes 1 1/4 cups nut butter * 

Ingredients

1 cups - raw peanuts

1 cup - raw cashews

1/4 cup - raw pecans



1/3 cup - maple syrup

1 tbsp - water

1 burnt cinnamon stick



2 tbsp - brown sugar

1/2 tbsp - sea salt

2 tbsp - grapeseed oil or preferred oil

Garnishes

Flakey salt

Instructions

Step 1 - Roast the nuts

Fist things first, mise en place all your ingredients along with pre heating your oven to 350 degrees Fahrenheit. Grab a baking sheet and line it with some parchment paper before spreading out the peanuts, cashews and pecans.

Step 2 - Reduce the syrup & torch the cinnamon stick

In a medium sized sauce pan or even a little pot. Pour in the maple syrup and on low heat allow to cook down, bubble and thicken. This is when I torch the cinnamon stick to release the flavors and drop it into the bubbling syrup mixture. I allowed mine to cook down for about 20 minutes before pouring in a tablespoon of water to loosen it enough to be able to pour into a container to cool down to use later.

Step 3 - Grind the nuts

For this step I used an old food processor and it worked perfectly. A nice high speed blender like a vitamix would also work and maybe even better for making a home made nut butter. This goes to show you don’t always need fancy gadgets to make something nice!

Place all the toasted nuts inside the food processor or work in small bits at a time to avoid over crowding if you happen to have a smaller food processor. My processor was big enough that I could blend everything all together without over crowding and over working the machine. I let it grind on the low setting for maybe 3 minutes.

Once it looks quite crumbly, add in the salt, brown sugar and oil and allow to blend for another 3 minutes before taking a break to scrape down the sides to allow everything to combine well to get nice and smooth. After scrapig down the sides and allowing everthing to incorporate and blend well. Transfer your freshly made nut butter to a nice container or mason jar to enjoy later.

Step 4 - Serve

Now for the fun part. Toasting your favorite bread and enjoying this decadent nut butter. I really love the flavor of this because I feel you can really taste the distinct flavors of the toasted pecans, burnt cinnamon, brown sugar and caramelized maple.

* Left over nut butter can be stored for up to a month in a nicely sealed jar *
