Chipotle Cauliflower Tacos
These chipotle cauliflower tacos with guacamole are bursting with flavor and it's dishes like this that make me forget that I am vegan after 11 years. Something that I love about this journey is that I eat way more fruits and vegetables. Along the way in my plant-based journey all the diversity in fruits, vegetables and starches is what really inspired me to experiment in the kitchen. There are definitely times I feel lazy - especially as someone who has a lot of ingredients and not a lot of ready to eat foods. But at the same time in my humble opinion there is no comparison to a home cooked meal.
No shame on the store bought version but there's nothing like homemade tortillas. What really makes this dish is the chipotle marinade that comes together in less than 5 minutes in the blender.
Chipotle Cauliflower Tacos

Ingredients

1 whole cauliflower - broken up into florets
Marinade
3 chipotle peppers in adobo
2 tbsp - adobo sauce
2 tbsp - oil
1 tbsp - garlic
1 tbsp - maple syrup
salt / pepper to taste
Guacamole
1 avocado
1/4 cup - vegan mayo
1/4 cup - chopped cilantro
1/4 cup - lime juice
1/2 tbsp - minced garlic
salt / pepper to taste
Garnishes
Sliced red onions
Cilantro
Fresh lime
Vegan Cotija cheese ( See recipe )
Instructions
Step 1 - Make the marinade
To get started, to make the marinade I like to use my Nutribullet but I think a regular blender or maybe even a food processor could work too.
Blend all the ingredients till smooth and set aside.
Step 2 - Prepare the cauliflower
Cut the cauliflower into florets and in a large bowl toss them in the marinade to coat them well. Then air fry them for 30 min at 400 degrees Fahrenheit.
Step 3 - Make the guacamole
I used my Nutribullet again for this but you could of course make the guac by hand in a bowl using a fork. Simply blend or combine well all the guacamole ingredients together till you reach the chunkiness or smoothness desired.
Step 4 - Make the vegan “cotija cheese”
I have yet to find a real vegan cotija cheese however I think I have stumbled on a pretty neat hack. I love Violife vegan cheese and I think their mozzarella shreds work perfect as a cotija cheese hack. To do this I simply pulse the cheese in a food processor until it resembles cotija cheese.
Step 5 - Assemble the tacos
To build each taco I start with maybe a heaping tablespoon worth of guac and spread that out over the bottom. Then neatly line up 3-4 cauliflower florets depending on the size and then top with some sliced red onions, cilantro and vegan “cotija” cheese.
