Sweet Potato Casserole

* Serves approx. 6   * 

Ingredients

4 sweet potatoes - ( approx. 920 grams )

1/2 cup - vegan butter

1/4 cup - brown sugar

1/2 tsp - cinnamon powder

1/4 tsp - salt

1/4 tsp - ginger powder

1/4 cup - oat milk

10 oz - Dandies Vegan Marshmallows

1/4 - chopped pecans

Tools you will need

  • A Large Pot

  • Wooden Spoon or Spatula

  • A Whisk or Potato Masher

  • 8 x 8 baking dish

Instructions

Step 1 - Gather all ingredients & peel sweet potatoes

There is nothing worse than going to make something and realizing you don’t have the stuff ! Gather all the essential mise en place, get a large pot of water boiling and peel the sweet potatoes and cut them into large chunks. Boil the chunks of sweet potato until cooked through and firm, then strain out the water.

Step 2 - Mash & Season

In the same large pot, melt 1 tbsp of butter and add in the drained sweet potatoes. Give them a good mix into the butter and then go ahead adding over top all the spices, brown sugar and remaining butter. With a whisk or a potato masher, mash everything really well. Some folks like their sweet potato casserole on the lumpier side and some prefer it more smooth. I don’t think there is a wrong way here so you do you.

Step 3 - Top with Marshmallows & Pecans

I used Dandies Marshmallow’s for this and cut each marshmallow in half before arranging them over top, in between the cracks sprinkle in some brown sugar and chopped pecans. After this, all that’s left is to pop this is the oven under the low broiler setting. Keep an eye on it, I say maybe less than 5 minutes and the Marshmallows will be perfectly caramelized and the casserole will be ready.

Step 4 - Cool Down & Plate

Let your masterpiece cool down on the counter or on top if the stove for at least 5 - 10 minutes. To serve, I like to use a large spoon and scoop a serving onto a plate or bowl. Typically sweet potato casserole is prepared with other Fall themed dishes but if you are anything like me. I dont need a special occasion to make and eat sweet potato cassarole ! So enjoy right away and save the left overs in a food safe, airtight container for up to 7 days.
